Pecan, Cherry & Chocolate Chip Granola Bars
Today is National Granola Bar Day and we've got a super easy recipe to pair wanu with! These delicious granola bars can be customized just to your liking! Feel free to switch up the nuts, cherries or chocolate chips to make them your own!   Ingredients:
  • 1 cup pecans 
  • 1 ½ cups rolled oats 
  • 1 heaping cup pitted dates 
  • ¼ cup maple syrup 
  • ¼ cup creamy peanut butter 
  • ½ cup dried cherries 
  • ½ cup chocolate chips 
Directions: Preheat oven to 350.  Line an 8x8 baking dish with plastic wrap or parchment paper.  On a parchment lined baking dish, toast oats and pecans for 10-15 minutes to achieve a delicious toasted flavor.  While the oats and pecans are toasting, prepare the dates.  Add dates to a food processor and blend until the mixture forms a ball.  Once oats and pecans are done toasting, combine them with the dates and cherries in a large mixing bowl.  In a large saucepan, add maple syrup and peanut butter until warm and combined well.  Add the oats and nuts mixture to the pan and combine well, making sure to break up any large chunks of the dates.  Return mixture to the mixing bowl and add chocolate chips, combining well but not too long so that the chips melt.   Add mixture to the baking dish you prepped at the beginning and press down firmly and evenly.  Allow to cool in the fridge overnight.  In the morning, slice into squares or rectangles and store in an airtight container or in the fridge or freezer for a longer shelf life.
